Min’s Gourmet is putting the “FUN” in “fundido” for you! This traditionally cheese & chorizo dish is given a
New Mexican twist by subbing Min’s Taco Night Blend for the chorizo. Add one or more of the options (see
below) and you have yourself a party in your mouth! But enough of the clever verbiage, let’s get on with the
recipe (You’re gonna’ love this)!

NOTE:
We recommend Min’s Taco Night Blend with ground beef & Green Chile Taco Blend with ground pork!

Instructions

Preheat oven to 400°

  • In a large oven-safe skillet, heat the Bacon Grease, then saute’ the Onion until translucent. Add the Ground
    Beef or Pork (See Note) and cook just until the pink is gone. Drain as needed.
  • Sprinkle the Min’s Taco Blend (Red or Green) over the top and add the Water. Mix well and simmer until the moisture is absorbed.
  • If you are using Roasted Green Chile, now is the time to stir it in.
  • Reserve about 1/3 of the mixture from the skillet for toppings.
  • Add the Quesadilla Cheese to the skillet on top of the Taco Mix.
  • Slide in the oven until melted, bubbly, and slightly browned in places.
  • Remove from oven & top with reserved mixture, and Tomatoes & Green Onions, if using.
  • Serve immediately right out of the skillet with dippers.
